A: I assume you're looking for a nature-based vacation because that's what EcoFlorida is about.
First, you mentioned warmth, so let's talk about that. You should know that in late December, the temperature is likely to be warmer in Florida than in most other places in the United States, but the weather is so variable in the winter. There's a good chance that the temperature won't reach the 80s. This is especially true in northern Florida. Please see our page on Florida weather.
If your baby likes the water and it's warm, your family may enjoy the beach. The baby can walk in the surf and play in the sand. Just be sure to keep the baby covered with sunscreen with a high SPF and also with as much clothing as possible so s/he doesn't get burned. People can get sunburns even on cool, cloudy days. Keep in mind that many lakes have beaches -- not just the ocean.
A boat ride is another good water-based option for a baby. You can rent canoes and kayaks at many Florida state parks, for example. As long as your baby wears a personal flotation device, a short paddle or guided boat tour will be something s/he can enjoy. If you like to hike, there are numerous hiking trails in Florida where you can get out and explore. The baby can come along in a backpack-like carrier made just for this purpose and see everything that you do.
Many children, even as young as yours, like animals, so you may consider a trip to Homosassa Springs Wildlife State Park, which begins with a boat ride that takes you to the main part of the park where your family can see several species of native Florida wildlife. The main attraction here is the spring full of manatees that live in the park year-round. An underwater observation area lets you see the manatees better.
